
Sole di Luna, Malvasia ferma dei Colli Piacentini DOC
Type: Colli Piacentini DOC Malvasia
Varietal: aromatic Malvasia di Candia
Traditional grape varietal. Medium cluster, tapered, pyramidal, often winged, slightly loose-packed (130-200 gr). Medium spherical berry. Thin, sturdy skin, not very veiled, golden yellow colour with dark brown spots. Very aromatic juice.
Vineyard: in the territory of Vicobarone, Ziano Piacentino
Vinification: soft press, temperature controlled fermentation in steel tanks for 4/5 days with local and selected yeasts
Aeging: bottle aged for one month
Analytical data (after 1 year): total acidity 5.7 g/l, volatile 0.42, dry extract 21.5 g/l
Colour: pale yellow tending towards gold, light greyish highlights, uniform colouring, limpid and clean; good glycerine base (3.5- 4.,5 g/l)
Aroma: excellent aromatic notes of mature Malvasia di Candia, with hints of apricot; good nose and palate acidity and balance
Flavour: aromatic, medium long density and fruitiness, good overall acidity and pH (3.4); pleasing sweetness with good glycerine body
Sensorial qualities: a pleasing wine, good nose harmony, excellent palate balance especially for the predominating aromatic nose/palate notes; fresh sense of acidity and minerals which covers the palate. It is a great Malvasia.
Pairing: Goes especially well with charcuterie, both cold and hot, with the traditional “torta fritta” spread with sweet, soft gorgonzola cheese, as well as the typical dishes from the Piacenza and Parma areas; tasty, rich and spicy dishes. Baked pastries, white fruit tarts, fresh seasonal fruit cocktail. Very good also as a meditation wine.
