Varietal: 60% Pinot Blanc, 20% Pinot Rosé, 20% Pinot Noir
Vinification: The grapes were harvested by hand last year at a very early date, August 16th, which allowed us to maintain a good acidity level while not increasing the alcohol content too much. The must obtained from the soft pressing was cooled for a day to clarify it for the successive natural decanting.
The vinification was done using traditional methods, with fermentation in controlled temperature steel vats. The frothiness was obtained naturally in pressurized steel vats to heighten both the organoleptic characteristics and pleasing aromas.
