Barbera (traditional): Medium cluster of piramidal shape, tends to be compact, winged (150-200 gr). Medium berry, ellipsoidal; skin covered with a slight powdery veil, intense blue colour, thin but consistent
Vinification: fermentation in steel tanks with both native and selected yeasts to enhance the characteristics of the varietal
Colour: dark ruby red
Aroma: pleasantly and intensely characteristic with balanced slightly spicy notes; good balance
Flavour: full-flavoured, lingering and pleasantly tannic; good acidity and dry taste
Serving: 14 – 16 °C (summer), 16 – 18 °C (winter); stemmed rounded glass in closed tulip form
Pairing: goes well with dry pasta dishes, roasts, stews, game, and typical dishes of the Emilia and Piacenza territories
